Grilled Chicken Salad With Mixed Berries And Walnuts
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1 tbsp olive oil
- 8 cups mixed greens
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 1/2 cup chopped walnuts
- 4 tbsp balsamic vinaigrette
- Season chicken breasts with salt, pepper, garlic powder, and paprika.
- Heat olive oil in a grill pan over medium-high heat. Add chicken and cook for 4-5 minutes on each side, or until fully cooked.
- Remove from heat and let cool for 5 minutes.
- In a large bowl, combine mixed greens, mixed berries, chopped walnuts, and balsamic vinaigrette.
- Slice chicken into thin strips and add to the salad.
- Serve immediately.
