Ingredients
  

  • 4 large portobello mushrooms, stems removed
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 clove garlic, minced
  • 1/4 tsp black pepper
  • 8 slices whole grain bread, low-sodium
  • 1 cup mixed greens, washed and dried
  • 1 large tomato, sliced
  • 1 small red onion, thinly sliced
  • 1/4 cup low-sodium Dijon mustard

Instructions
 

  • Preheat your grill to medium heat.
  • In a small bowl, whisk together olive oil, balsamic vinegar, garlic, and black pepper.
  • Brush the portobello mushrooms with the oil mixture on both sides.
  • Grill the mushrooms for 5-7 minutes per side, or until tender.
  • Lightly toast the bread slices on the grill for about 1-2 minutes.
  • Assemble the sandwiches by spreading the low-sodium Dijon mustard on one side of each bread slice.
  • Place the grilled portobello mushroom on top, followed by mixed greens, tomato slices, and red onion.
  • Top with another slice of bread and serve immediately.

NOTE

  • To make this recipe vegan, use a vegan whole grain bread.
  • You can also grill the vegetables for added flavor.
