Grilled Portobello Mushroom Sandwich With Mixed Greens

- 4 large portobello mushrooms, stems removed
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 clove garlic, minced
- 1/4 tsp black pepper
- 8 slices whole grain bread, low-sodium
- 1 cup mixed greens, washed and dried
- 1 large tomato, sliced
- 1 small red onion, thinly sliced
- 1/4 cup low-sodium Dijon mustard
InstructionsÂ
- Preheat your grill to medium heat.
- In a small bowl, whisk together olive oil, balsamic vinegar, garlic, and black pepper.
- Brush the portobello mushrooms with the oil mixture on both sides.
- Grill the mushrooms for 5-7 minutes per side, or until tender.
- Lightly toast the bread slices on the grill for about 1-2 minutes.
- Assemble the sandwiches by spreading the low-sodium Dijon mustard on one side of each bread slice.
- Place the grilled portobello mushroom on top, followed by mixed greens, tomato slices, and red onion.
- Top with another slice of bread and serve immediately.
NOTE
- To make this recipe vegan, use a vegan whole grain bread.
