Lentil Soup Recipe
Ingredients Â
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 cup dry brown lentils, rinsed
- 4 cups low-sodium vegetable broth
- 1 tsp ground cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish
InstructionsÂ
- In a large pot, heat the olive oil over medium heat.
- Add the onion and garlic, and sauté for 2-3 minutes, or until fragrant.
- Add the carrots and celery, and sauté for an additional 2-3 minutes.
- Add the lentils, vegetable broth, cumin, and smoked paprika.
- Bring to a boil, then reduce heat to low and simmer for 25-30 minutes, or until lentils are tender.
- Season with salt and pepper to taste.
- Garnish with fresh parsley.
NOTE
- Rinse lentils thoroughly before using.
- For a creamier consistency, blend some of the soup with an immersion blender or in a regular blender.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
