Ingredients
  

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 cup dry brown lentils, rinsed
  • 4 cups low-sodium vegetable broth
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • In a large pot, heat the olive oil over medium heat.
  • Add the onion and garlic, and sauté for 2-3 minutes, or until fragrant.
  • Add the carrots and celery, and sauté for an additional 2-3 minutes.
  • Add the lentils, vegetable broth, cumin, and smoked paprika.
  • Bring to a boil, then reduce heat to low and simmer for 25-30 minutes, or until lentils are tender.
  • Season with salt and pepper to taste.
  • Garnish with fresh parsley.

NOTE

  • Rinse lentils thoroughly before using.
  • For a creamier consistency, blend some of the soup with an immersion blender or in a regular blender.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
