Scrambled Eggs With Spinach, Tomatoes, And Feta Cheese
Ingredients
- 4 large eggs
- 1 cup baby spinach
- 1/2 cup cherry tomatoes, halved
- 1/4 cup crumbled feta cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a small bowl, beat the eggs with salt and pepper until well combined.
- Heat the olive oil in a non-stick skillet over medium heat.
- Add the spinach and tomatoes to the skillet and sauté for 1-2 minutes, until the spinach is wilted and the tomatoes are slightly softened.
- Pour the beaten eggs into the skillet and stir gently with a spatula until the eggs are scrambled and cooked through, about 3-4 minutes.
- Sprinkle the feta cheese over the top of the eggs and stir until melted and well combined.

NOTE
