Grilled Chicken And Vegetable Skewers With Brown Rice
Ingredients Â
- 1 lb boneless, skinless chicken breast, cut into chunks
- 2 bell peppers, cut into chunks
- 1 red onion, cut into chunks
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 2 cups cooked brown rice
InstructionsÂ
- Soak wooden skewers in water for 30 minutes to prevent burning.
- Preheat grill to medium-high heat.
- Thread chicken and vegetables onto skewers.
- In a small bowl, whisk together olive oil, balsamic vinegar, garlic powder, oregano, salt, and pepper.
- Brush the mixture over the skewers, making sure to coat all sides.
- Grill the skewers for about 10-12 minutes, or until the chicken is cooked through and the vegetables are tender.
- Serve with brown rice and enjoy!
NOTE
- You can also use metal skewers if you have them.
- If you don’t have a grill, you can also cook the skewers in the oven on a baking sheet at 400°F for 15-20 minutes, or until the chicken is cooked through and the vegetables are tender.
