Grilled Chicken And Vegetable Skewers With Brown Rice

This grilled chicken and vegetable skewer recipe is a great way to incorporate more heart-healthy ingredients into your diet.
The skewers are loaded with colorful vegetables and lean chicken breast, and served with fiber-rich brown rice for a satisfying and nutritious lunch.
This recipe is easy to prepare and perfect for meal prepping.

Ingredients
  

  • 1 lb boneless, skinless chicken breast, cut into chunks
  • 2 bell peppers, cut into chunks
  • 1 red onion, cut into chunks
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 2 cups cooked brown rice

Instructions
 

  • Soak wooden skewers in water for 30 minutes to prevent burning.
  • Preheat grill to medium-high heat.
  • Thread chicken and vegetables onto skewers.
  • In a small bowl, whisk together olive oil, balsamic vinegar, garlic powder, oregano, salt, and pepper.
  • Brush the mixture over the skewers, making sure to coat all sides.
  • Grill the skewers for about 10-12 minutes, or until the chicken is cooked through and the vegetables are tender.
  • Serve with brown rice and enjoy!

NOTE

  • You can also use metal skewers if you have them.
  • If you don’t have a grill, you can also cook the skewers in the oven on a baking sheet at 400°F for 15-20 minutes, or until the chicken is cooked through and the vegetables are tender.
