Ingredients
  

  • 4 salmon fillets (about 6 ounces each)
  • 1 lemon, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 400°F.
  • Line a baking sheet with parchment paper.
  • In a small bowl, whisk together olive oil, Dijon mustard, salt, and pepper.
  • Place salmon fillets on the prepared baking sheet and brush with the olive oil mixture.
  • Arrange lemon slices on top of the salmon fillets.
  • Sprinkle fresh parsley and dill over the top of the salmon fillets.
  • Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • Serve hot and enjoy!

NOTE

  • Make sure to buy salmon fillets with the skin still on to help keep the fish moist during cooking.
  • You can use any herbs you like in this recipe, such as thyme, rosemary, or basil.
  • For added flavor, you can also sprinkle some garlic powder or onion powder on top of the salmon fillets before baking.
